Prosciutto & YogiBalls Cucumber Appetizer

When I want a carb free snack, this is perfect and so easy!

Prosciutto & YogiBalls Cucumber Appetizer


· 16 1/4-inches slices English Cucumber (not peeled)

· 1 Jar YogiBalls

· ¼ cup Fig butter or jam or preserves, which ever you have

· 2 ounces Prosciutto (cut into 16 pieces)

English cucumbers are nice for these as both their seeds and skin are more digestible than those of regular cucumber and not as bitter. If using regular cucumber, peel strips of the skin off leaving some of the skin. Regular cucumbers have a slightly bitter tasting skin but keeping stripes of it gives it a little more stability when picking up to eat.

Arrange a piece of prosciutto on top of each cucumber slice. Place a YogiBall on each and smash gently with back of a spoon. Garnish with ½ teaspoon fig preserves or fig butter.
